CATA'S NOTES
The first vintage of O Luar do Sil Tostado by Seadur in 2021 was especially scarce due to the low wort yield. They were used 2,000 kg of grapes , and only 463 500 ml bottles were bottled .
ELABORATION
The production of this wine begins with a careful selection of grape plots , choosing locations with sunny and healthy microclimates. The clusters , mature and good separated , are taken to the winery in 15 kg boxes and HE they hang individually with ropes in a dry and ventilated space. Over there, The clusters are slowly dried until January of the following year, concentrating their sugars and aromas. . This meticulous processing produces an extremely low yield of 35 liters per 100 kg of fresh grapes.
The must ferments slowly in used French oak barrels with native yeasts. , stopping naturally and leaving a significant residual sugar content. The wine matures in these same barrels with its lees for 12 months before being bottled.
CURIOSITIES
Pago de los Capellanes is in the heart of the Ribera del Duero, located just one kilometer from Pedrosa de Duero, a town in Burgos where some of the best grapes in the entire Ribera are found.
In its origins, there were only a few thousand vines on the farm, in the traditional glass shape. The Rodero-Villa couple, together with an exceptional team, and betting on their particular way of conceiving wine, has achieved that today the Pago de los Capellanes grows from 100 hectares of its own vineyard, on trellises, that surround the winery, combining varieties such as Tempranillo (or Tinto Fino), Cabernet Sauvignon and Merlot, and fulfilling a dream that dates back to 1980.
Small production allows for better product quality control, as well as personalized monitoring of all bottled batches. At Pago de los Capellanes we only allow 5,000 kg of grapes/ha, below the 7,000 allowed by the Ribera del Duero Regulatory Council, betting on the quality of our raw material.
This is how our range of wines was born, which today reaches the market with the Pago de los Capellanes seal. Very personal reds, the result of tranquility, affection and patience.
