ELABORATION

The grapes come from vineyards located at around 550 meters above sea level and with different orientations. The harvest is manual in boxes of 20 kilograms and fast transport to the winery. Vinification by farms with similar soil characteristics. Brief peculiar maceration. Static settling and fermentation using wild yeasts in stainless steel tanks at a controlled temperature. Malolactic fermentation is not carried out. Clarification with agents of mineral origin. stabilization by cold and slight filtration by earth.

CURIOSITIES

Valdesil It began when an ancestor of the Prada family, convinced of the nobility of the Godello variety, planted the first piece of Godello in 1885, on the high slate slopes of the hills in the Sil Valley.

The winery spirit of the family of Valdesil It has its origin in an endearing character, José Ramón Gayoso, viticulturist from Portela. This viticulturist plants the first vineyard entirely with the Godello variety, convinced of the potential of this native Valdeorras variety and against the currents of the time. Little by little, these plantations of small Pezas plots were expanded, choosing the best locations, in the surroundings of Portela. Years later, many of these parcels were sold to other viticulturists, remaining only owned the Pedrouzos farm.
