CATA's notes:
- Color: Dark pillory with maroon edge
- Nose: very expressive and with good complexity, very ripe red fruit and black fruit, almost jam, chocolate, spices, coffee, balsamic and mineral hints.
- Mouth: Controlled power, tasty, with ripe fruit predominating over toasted notes. Combination of fresh balsamic with pleasant spices. Polished tannins, long finish and great persistence.
Preparation and Aging: The Casa Castillo Pie Franco grapes come from the plot
The Solana where is a plantation
Monastrell dating from 1941 . Its fruit is destemmed without crushing and vatted in underground winepresses where alcoholic fermentation takes place conducted by native yeasts. This process lasts for about 10 days at 26º C during which manual bazuqueo is practiced. Afterwards, the wine is devatted and goes to
new French oak barrels , where malolactic fermentation is completed in contact with its lees. After
a minimum aging of 22 months , a limited number of bottles are bottled without filtering, due to the low yield of the plot.
Curiosities: The Casa Castillo Wine Estate aims to produce wines with the personality, flavor and character of each plot. Promoting quality and respecting the tradition of the area, wines that express the characteristics of the land and the microclimate in which the vineyards are located, the particularities of the Mediterranean varieties, as well as the human factor.
