Development and aging
100% syrah from the vineyard Valtosca a maceration is carried out cold for five days in underground wineries, end of alcoholic fermentation in new French oak barrels of 500 liters capacity, where "batonage" is performed until the end of the malolactic fermentation. Curiosities:
In 1941, it is when Don Jose Sanchez-Cerezo acquires the Casa Castillo property for the exploitation of rosemary bush. On the farm it was nestled a winery built by the French in 1870.
It is in 1985 when the second generation of the family (Nemesio and his son Jose Maria Vicente) start a new project with the restructuring of vineyards and the introduction of new varieties. In 1991 the winery building was renovated respecting the original structure and the first preparation is carried out our first wine market in 1993 as "Casa Castillo Crianza 1991". Today José María Vicente is at the forefront of the wine estate Casa Castillo.
