Harvest and manual selection in boxes of 15 Kg.
Pressing and subsequent fermentation with native yeast in stainless steel tanks at 15ºC.
Permanence of more than one year with fine lees.
After this stay, the wine is assembled with others from previous years to obtain the sparkling base wine.
This base wine is prepared with yeasts and sugar to be aged in the bottle, where the yeasts release the natural carbonic gas that is trapped inside the bottle integrating little by little.
During this aging in the bottle, the wine and the bubbles are in contact with the lees defining the character and personality of the wine.
Once the aging is finished, the removal and disgorgement of each bottle arrives.
After 3 months of rest, the final finish is made on the labeling and boxing.
