Development and aging
After alcoholic fermentation, the base wine can be aged in contact with its lees. During this process, the wine remains in contact with yeast sediments and other cellular residues that are generated during fermentation. This aging provides greater complexity and texture to the wine, as well as characteristic notes of bakery and dried fruit.

Wineries of the Palace of Fefiñanes was founded in 1904, which makes it the oldest in Pontevedra . The winery is located in the basement of the palace of the same name, erected by Viscount Gonzalo Sarmiento Valladares in a square populated by stone buildings and circular balconies. Joaquina Armada and Miguel Gil, owners of the palace, were the ones who started the winery and the first to bottle and label an Albariño wine.
