Nose: Intense and complex, with notes of stone fruit (apricot, nectarine) and white flowers. after aerating the glass mineral and citrus aromas.

Mouth: Subtle attack with an unctuous and fatty mid palate, medium acidity, marked ripe fruit and a long finish.

For the elaboration of Quintaluna, grapes originating from a selection of plots that extend to different points in the north of the province of Segovia are used: Nieva, Aldeanueva del Codonal, Aldehuela del Codonal and Santiuste de San Juan Bautista. Old, pre-phylloxera grapes predominate, which are blended with grapes from a younger, selected, low-yield vineyard.

The profile of the terroir is a living history of viticulture. It shows a mixture of sandy soils with a high codon content. A structure that allowed these vines to resist phylloxera, a plague that caused the end of the European vineyard at the end of the 19th century.

Fermentation with native yeasts

The harvest was done manually. The bunches, after going through the selection table, were destemmed and gently pressed. The must fermented in small stainless steel tanks, with native yeasts. For nine months the wine remained in the same tanks on its lees and other elaborations in fudre and barrel. The wine was clarified and bottled in the summer of 2021.
