After a selection of the best payouts harvest is done manually and the manual selection of the best clusters for the development of Cumal is performed. After a total de-stemming, maceration took 15 days in stainless steel.
The aging period is 15 months in Hungarian and FranCrianza barrels: 15 months in French oak barrels
