Preparation and Aging:

Certified organic viticulture from our own pre-phylloxera vineyards that are more than 100 years old, located in the area of Bull , planted in cups and with low yields.

Vinification is carried out with 20% whole bunch, the rest is shelled and trampled on foot. Spontaneous fermentation and maceration takes place in small stainless steel tanks, a process that lasts between 12 and 25 days.

After the alcoholic fermentation, malolactic fermentation also develops spontaneously, with native yeasts and bacteria that are natural to the wine.
