- The objective is to obtain a small extraction of color and varietal aromas.
- Once the must is obtained, a rapid settling process is carried out by flotation, which allows obtaining a clean and crystalline must immediately.
- It begins to ferment in stainless steel tanks with selected yeasts and controlling the fermentation temperature between 14 and 16ºC.
- The mixture of the two varieties is produced after finishing the alcoholic fermentation.
- A monthly bottling is carried out to guarantee the freshness and youth of this sparkling wine. Bottling is carried out at 2ºC.
Curiosities: The success of the wines from Bodegas Aragonesas is not by chance. The restructuring and in many cases the preservation of the best vineyards allows us to obtain, in addition to one of the best Garnachas on the market, the best musts to achieve vinifications of proven quality. The monitoring of the growth, health and harvest calendar guarantee us the quality of the grapes and their collection at the exact moment of maturation.
If the work of oenologists and technicians is remarkable, that of our viticulturists is no less so. Hundreds of people who each day apply specific care with care and rigor so that their vineyards extract the best of itself from the land.
But, despite everything, the main asset continues to be the vineyard and, in a special way, the Garnachas, possibly unique in the world due to their age and number of vines.
Bodegas Aragonesas is part of the Campo de Borja Denomination of Origin and its vineyards are located in the foothills of the Iberian mountain range, in the northernmost part of the province of Zaragoza. This entire area, which occupies the foothills of the Iberian mountain range and the upper Ebro valley, shared with Navarra and La Rioja, constitutes a privileged territory for the cultivation of vines, both for the quality of its land and its climate.
