CURIOSITIES Cuevas de Arom (Arom is Fernando Mora's last name backwards) is the new project by the creators of Bodegas Frontonio, Fernando Mora, Francisco Latasa and Mario López, in collaboration with the Santo Cristo de Ainzón cooperative winery. Cuevas de Arom recovers the tradition of making wine underground, in underground caves. They also use a variety of containers such as traditional cement, flexitank to bocoyes or oak barrels. Some of the oldest and highest vineyards in Calatayud are in the hands of winegrowers of Bodegas San Alejandro, in this case the selected areas are Alarba, Acered and Murero. On Precambrian soils made up of slates and impossible slopes at more than 800 meters, where old Grenache vineyards co-planted with other varieties that give rise to unique wines are drawn.
