- It is a wine of an elegant topaz color.
- Subtle and delicate aroma, with almond hints characteristic of the Palomino variety and yeast, as a result of its time under the “flower veil”.
- In the mouth it is pleasant with balanced acidity, a long aftertaste in which notes of dried fruits and winey wood return.
Preparation and Aging: As soon as the Palomino grapes arrive at the winery they are gently pressed. The must obtained from this first pressing is called “yolk must” and is considered the most elegant and delicate. After fermentation, classification and fortification at 15.5%, the wine enters the Tio Pepe solera, where it will spend more than 4 years in American oak casks following the traditional Soleras system. During this process, the wine undergoes biological aging beneath the layer of yeast known as the “velo flor.” After these four years, the flor begins to fade and the wine will enter the solera of Viña AB, where it will age in contact with the air and begin to oxidize. In total, Viña AB will spend an average of 12 years in the boot.
