TASTING NOTE:
COLOR: Dark cherry color with a medium layer that is on the high side and moving ruby rims in the glass.
SCENT: Medium intensity, presence of red and black fruit, even hints of ripe fruit, herbaceous contributions, toasted, smoked, slightly spicy spices, mineral-earthy background.
MOUTH: Fresh, mid palate and quite long finish with good persistence.
Production and Aging:
Tinaja de Zaleo is described as a 100% Exremeño, a 100% traditional and 100% innovative wine. This wine is born in the clay jar, the most classic container for wine production.
The expressiveness of the wines that mature in jars is spectacular. There are many differences with other wines or grapes that are aged in a more conventional aging, that of stainless steel and that of aging in barrels.
Tinaja de Zaleo is a wine with soul, it tastes like country wine, like grandfather's wine. The vats offer us a pure wine, with hardly any interference with what the vineyard is.
The original drawing on the front of the bottle is made in charcoal by José Mª Fernández de Vega, director of Buñuel in the Turtle Labyrinth, Goya for Best Animated Film, 2020.
