TASTING NOTES

  • Appearance: Bright golden yellow.
  • Nose: Aromas of apricot, mango, orange peel, medlar, dates, pistachio cream and vanilla. Everything merges with aroma of Darjeeling tea, mimosa flowers and orange blossom, ginger and sesame. A set reminiscent of the perfume of Italian pastry.
  • Palate: Sweet and fresh, at the same time very lively with citrus notes. It is reminiscent of nougat and candied ginger.

 
ELABORATION

Variety 100% Moscato Bianco.
Manual harvest and subsequent drying.
Elaborated by the Sicilian system of "appassimiento".
Displacement in boxes of 5 Kg in a ventilated atmosphere at 23ºC.
When the grapes have lost half of their weight, about 40 days later, they are pressed, being the must obtained particularly rich in sugars.
Then the must is slowly fermented at 18ºC for more than a month in stainless steel vats, where they remain until bottling.

CURIOSITIES

Passito Di Noto is a wine produced by Bodega Planeta, a Sicilian group that stretches from Menfi to Capo Milazzo.

It all started in Sambuca di Sicilia, on an estate that belongs to the Planeta family since the seventeenth century. This was where, in the mid-80s, three young enthusiasts (Alessio, Francesca and Santi Planeta) embarked on their winemaking adventure.

Respect for the environment and care for biodiversity are the watchwords of this company, which combines ancestral practices with the most innovative oenological processes and in which native grapes coexist in total harmony with international varieties.
