TASTING:
Floral tones predominate in its character, mixed with citrus and honeyed tones. Elegant and fine nose, its palate is rich and persistent. The fine acidity and the sweet fruity character form a perfect balance.
PREPARATION AND AGEING:
During the harvest, several passes to the vineyard are carried out, but only those bunches that contain at least 50% of botrytised berries are selected. After destemming, the berries are macerated for 4-12 hours and then they are pressed, giving prominence to noble rot. Late Harvest is an interesting blend of different grape varieties that produces a very balanced wine. Fermentation takes place in stainless steel tanks for 20-30 days. Next, the wine ages in barrels of Hungarian oak ("Gönc" for 136 liters and "Szerednye" for 220 liters) for three months and is refined in the bottle for a 10-month aging period.
Tokaj's Late Harvest wines compete with similar sweet wines from the rest of the world, but what sets them apart is their content of aszú grapes infected by the botrytis cinerea fungus. They are elegant, sweet but fresh wines with citrus and honeyed aromas. This aszú grape content gives Tokaj a specific character thanks to the balance between sugar and acidity, which means that these wines are never heavy but lively and fresh.
CURIOSITIES:
The Tokaj legend has grown and grown in its four hundred year history; but it was not until 1630, when the greatness of the vineyard of Oremus was first spoken of. Today, it is the one with the greatest universal recognition.
