  • Nose : Its aromatic intensity shows great complexity due to the variety of the aromas it gives off, where there are notes of ripe white fruit, bakery, fine pastries, nuts such as almonds and white flowers.

Production and Aging:
To obtain this sparkling wine, we make base wines from different vintages until we find the perfect blend: the blend is made up of 17% 2015, 33% 2016 and 50% 2017. Aging in foudres, large barrels of 3,000 and 6,000 liters that allow the micro-oxygenation of the wine, provides structure, elegance and complexity to our first multi-vintage sparkling wine.
They are responsible for each step of the elaboration of our wines, from the field to the bottle. The grape comes from the family farm Les Tres Serres, located next to the Mestres forest, on the outskirts of Sant Sadurní d'Anoia and consisting of 4.5 hectares of xarel lo. The vineyard is harvested manually and we deposit the bunches in 25 kg boxes, we use a selection table, we enter the grapes by gravity and we press the whole bunch (Coquard press). We use heads and hearts (more than 50%) of the installment.

Organic and biodynamic viticulture
Based on the meticulous observation and treatment of the factors that influence the land and its habitat. They do not apply herbicides or chemical pesticides, using natural resources with the main objective of preserving the balance of the environment and maintaining spontaneous plant covers to achieve spongy soils. Through biodynamics, a step beyond ecology, they revive the vines and seek to raise the levels of biodiversity: they apply infusions and decoctions of plants To avoid pests, they make their own preparations and their animal and vegetable compost from their medicinal plant garden and their farm with cows, sheep, chickens, bees, hawks and horses.

CORPINNAT:
The word is made up of two concepts: cor (heart), the cradle where the first sparkling wines in Spain began to beat, more than 130 years ago; and pinnat, which comes from the etymological root pinnae, which refers to the origin of the place name penedès, already documented in the s. X as penetense. This Latin adjective derives from pinna, which means rock or rock and which, applied to penedès, is equivalent to a rocky territory.
