TASTING NOTES

  • Appearance: Cherry red colour with marked ruby tones.
  • Nose: Aromas of red and black fruits accompanied by nuances of aromatic herbs and menthol. Subtle spicy notes provided by the wood.
  • Palate: Ample and fresh, with a long journey that provides mineral and minty notes. Highly polished tannins. Vibrant finish full of subtle aromas of great complexity.

 
ELABORATION

100% Tempranillo variety.
Pre-fermentation maceration for 3 days in cold.
Fermentation with selected native yeasts.
Spontaneous malolactic fermentation at low temperature in French oak foudres, with periodic stirring of the lees.
Aged for 12 months in the same foudres.

CURIOSITIES

In the 14th century, the current hamlet of Pedrosa de Duero was home to a parish church. Here, chaplains offered masses and prayers in exchange for small plots of land. In time, the chaplaincy came to collect a large pay. In 1855, with the arrival of the confiscation of Mendizábal, the properties of the church and the clergy returned to the hands of the city council. The inhabitants of Pedrosa continued to call the payment "that of the chaplains".

The conservation of eight hundred-year-old walnut trees located in the vineyards was the starting point that determined the location of Pago de Los Capellanes.

The entire winery of Pago de Los Capellanes is integrated into the natural landscape that surrounds it through a continuous and fluid blanket of ivy, enriched with the majesty of the centenary walnut trees.
