Preparation and Aging:
The 2019 vintage has been marked by extreme drought in the months prior to the harvest, a mild and mild winter, cold spring and early bud break.
Once again, the preventive treatments carried out in the vineyard, such as cluster thinning and leaf removal, have allowed us to obtain quality grapes.
In Aldea del Fresno we are in the Cuqueña area, a 1.3-hectare vineyard of centenary Grenache in glass, on sandy loam soils with granite decomposition. Young Garnacha wine from the Sierra de Gredos.
The harvest was carried out manually and in boxes on September 10, 2019, at the optimal moment of grape ripening, with a production of 5000 kg. Prior to temperature-controlled alcoholic fermentation, a cold maceration is carried out for 3 days with 30% whole grapes and the rest destemmed.
The alcoholic fermentation is spontaneous, this process lasts a month, pumping over and delestages when required. In November, malolactic fermentation begins naturally, and once finished, aging begins with its fine lees for a year with 50% of the wine aged in French oak. After several rackings, and according to tasting, we will decide the moment of filtering and bottling. This is how the wine in the bottle finishes refining.
