ELABORATION

Traditional elaboration letting the grapes overripe in the vine.
After manual collection of the same, the bunches are spread on strips of esparto grass and subjected to sunlight for a few days until reaching the appropriate degree of sweetness.
Once in the winemaking hall, the grape grains are subjected to maceration and fermentation for several days, until they reach between 4-5% of alcohol volume, before being pressed.
On the must is added 10% wine alcohol to stop fermentation.
After a few months of resting at low temperature in stainless steel tanks, the wine ages for 18 months in French oak barrels.
CURIOSITIES
The first known antecedents of the production of red wines in the province of Cádiz, date from the fourteenth century and continue until the seventeenth century. During this period, there was a strong export flow, especially to the United Kingdom, of wines from the Sherry area, both white and red.
Finca Moncloa is a winery resulting from the concern of the González family for the world of quality wine, and is a great effort to recover the wine traditions lost in the area over the years.
Since 1972 González Byass has carried out trials in experimental plots, of white and red varieties, in his vineyards in Jerez de la Frontera. The good results obtained in these trials led to the acquisition, in 2000, of a plot of 45 hectares in the area of Arcos de la Frontera (Cádiz), for the planting of red varieties for the production of high quality wines.
