CATA'S NOTES
- Color: Picota cherry, high layer and thick tinted tear.
- Nose: It is quite intense and there are aromas of ripe fruit and marked toasted aromas, somewhat creamy, with some spicy notes and some chocolate with mint.
- Mouth: Remarkable entry into the mouth with nerve and power and revealing good ripe black fruit. Broad, intense, liquorous, spicy, black licorice and very persistent.
ELABORATION
D.O. Saint-Emilion Grand Cru
Made 70% with Merlot and 30% with Cabernet Franc.
Manual harvest in small boxes.
Optical selection tables.
Gentle vinification at low temperatures in concrete vats at a controlled temperature, with a vatting period of three weeks with moderate pump-overs.
14 months of aging in new French oak barrels.
CURIOSITIES
Since 2010, Silvio Denz and the Danish winemaker Peter Sisseck (producer of
Ribera del Duero Pingus ) jointly preside over the destinations of Château ROCHEYRON, a historic estate located on the plateau of the great wines of Saint-Émilion. The two men combine their know-how so that these 8.45 hectares of vineyards show their full potential every year. In biodynamic viticulture since 2014, the estate switches three years later to biodyvin conversion and successfully obtains the Organic Farming certification for the 2020 vintage. In Rocheyron, the duo and their team work closely with the vineyards to give an increasingly precise interpretation of this terroir.
