Night harvest, selection of grapes in the field and upon arrival at the winery, gravity production, cold maceration for 10 days and alcoholic fermentation at 15 ºC. Use of the "delestage" technique to increase color extraction. Aged for 11 months in new 500-liter French Allier oak barrels.

Curiosities:
This wine is made in Villafranca de los Barros, in a new winery called Pago de las Encomiendas. It is a winery pre-designed for the production of Quality wines, and although it does not present the grandeur of other oenological projects that have recently been presented in Extremadura, it is predicted to have a huge future.
