ELABORATION
100% Bobal variety.
Manual harvesting in 15 kg boxes.
Fermentation for 8-10 days in French oak vats with gentle pump-overs.
Post-fermentation maceration for 10-12 days.
Aged for 14 months in foudres and French oak barrels.
