Tempranillo de Valbuena is obtained from plots located on gently sloping concave slopes that descend from the slopes of the paramo. These soils have their origin in material that was eroding and accumulating as colluvium in the lower slopes, developing a high expression soil, with an important evolution concreted with the formation of a calcic horizon in depth.
Valbuena shows us a direct and understandable view of the greatness of this "terroir" with the direct influence of each year.The elaboration remains unchanged so that the climatic factors of each year mark the differences between the different harvests.
Fermentation with controlled temperature in stainless steel tanks with autochthonous yeast. Malolactic fermentation is also carried out in stainless steel.
After fermentation goes through a breeding, between wood and bottle, five years, hence the name of the wine Valbuena 5º. French and American wood, new and used 225-liter barrels, 20,000-liter barrels ... A long and complex process for a great wine.
