ELABORATION
Aging on lees in the underground cellar at a constant temperature of 12ºC for 3 years CURIOSITY The terroir of Mareuil-sur-Ay with a majority Pinot noir is evident in this cuvée that offers an excellent balance between structure, intensity and a long finish. Between 20 and 30% of the reserve wines of this champagne are aged in barrels using the solera method so that the oldest wines do not lose their freshness. It is a very harmonious champagne that can be combined with white meats, sausages and fish. As a curiosity, the name Royal Réserve refers to the ancestors of the Philipponnat family, owners of vineyards, wine merchants and oenologists who historically served Louis XIV
