PREPARATION AND AGEING:
The production of Aszú wine (teardrop wine) is a meticulous process only possible in exceptional vintages and in particular conditions that favor the development of "Botrytis cinerea" (noble rot). For hundreds of years it has been made in the same way, adding 3 baskets (puttonyos) with 25 kg of noble Aszú berries to a "Gönci" barrel (136 litres) of must. The Aszú berries are macerated for hours until they increase in size and then they are lightly pressed. The fermentation is It is made in new Hungarian oak barrels; a slow process that can take up to four weeks. The aging is completed in 220 and 350 liter barrels for 2 years and is bottled for one year.
Aszú wine can only be made in years of excellent harvests, when nature provides favorable climatic conditions for the development, under the best conditions, of noble rot. The tasting notes of these wines highlight the great cleanliness and, above all, the excellent balance between sweetness and acidity.
