Elaboration:
The grapes, 100% Cabernet Sauvignon, harvested in perfect sanitary condition and optimum ripeness, are kept in maceration with the skins until the rosé juice is bled. Once the solid residues have been eliminated, by static settling at 8 ºC, the clean must ferments, under the action of selected yeasts of the genus Saccharomyces cerevisiae, in stainless steel tanks at a controlled temperature (16 ºC). After fermentation, the wine is clarified with bentonite and stabilized at -5 ºC to eliminate excess of potassium bitartrate.
Curiosities:
The 2022 vintage has been characterized by high temperatures and low rainfall. Some conditions typical of Somontano that have been increased this year, registering temperatures of more than 40º in the months of June, July and August. Likewise, the first winter stretch was cold and dry, which was favorable for floral induction and eliminated the risk of transmission of wood diseases during winter pruning.
Spring arrived rainy and the high temperatures at the end of March and April accelerated the growth of the plants, which experienced an exceptional vegetative development as in a few years remembered.
The low rainfall during summer allowed the harvest of a fruit with impeccable health and a higher concentration of sugars.
