Elaboration and aging
Dehesa de los Canonigos is based on an agricultural operation which alternates the cultivation of beet, cereal, sunflower, pine and albacore fields since 1987. The wine is made after a careful and selected harvest with the Varieties of Tinto Fino grapes in 88% and Cabernet Sauvignon in 12% coming from vinas of about 40 years of age. The aging of this wine is 15 months in American oak barrels, medium roasted, fine grain, one to two years old and another 15 in the bottle before going to market.
