Tasting notes
Appearance: we find a brilliant and agile wine in the glass, with greyish tones that denote its youth.
Aroma: Citrus notes combined with hints of white fruit, almond blossoms and a lot of freshness that shows us that it is a mountain wine. After 5 minutes in a glass, the silkiness of the aromas increases and makes it elegant.
Palate: there is a good balance in the mouth. The acidity brings us this freshness of the wine of height, accompanied by a creaminess, after two months in fine lees. The white fruit, like pear, persists with the rest of aromas for a few minutes in the mouth after tasting it.
Elaboration:
The grapes used to make this wine come from very old vines of the Parellada variety. Vines of more than 60 years old, located in the estate that the Winery has in the Baltana Vella, at 480m high. These vines are planted in soils with a small slope and with a fairly extreme organic cultivation, produce grapes with a high concentration of aromas, and with a high enough alcohol content to be Parellada.
For several years, the farm has not been ploughed, thus avoiding overproduction and a balance of the vines, together with short pruning and good pruning in green, the winery makes the grapes reach a perfect point of ripening. Grape harvested by hand, picked on the same farm, and in small trailers is transported to the winery at a distance of only 2 km.
Hand-picked, no skidding, it is put into the closed pneumatic press where it is pressed at low pressure. Fermentation at controlled temperature with selected yeasts. Aging of 2 months in stainless steel tank and before bottling is filtered slightly.
Marriage: We can taste it with a paella of vegetables and chicken or with a risotto. It also combines with red meat and white meat, rare, and creamy cheeses.
