Sight : Bronze with orange reflections.
Nose : Elegant and intense, with a predominance of sweet notes of cocoa and vanilla accompanied by citrus touches of orange peel and also nuts.
Mouth : Dry, tasty and enveloping. with great structure and a marked mineral and saline character, very balanced and with a persistent finish. Authentic wonder.
Variety and origin: 100% Pedro Ximénez from the Superior Quality area of the
DO (Sierra de Montilla and Moriles Altos).
Elaboration: "rara avis" among the fortified wines. It comes from a careful
selection of atypical casks of old wines subjected to oxidative aging.
Breeding: eminently oxidative ageing. system of criaderas and soleras,
over a period of approximately 25 years, in American oak casks.
