José Pariente Cuvee Especial is a single variety of Verdejo. The grapes come from old vines over 40 years old grown in the area of Camino de Puerto, La Seca.
The grapes are harvested by hand in 20kg boxes at night, this is to preserve the best attributes of the grapes.
For its elaboration, ovoid vats of clayey cement are used for the fermentation. This type of vats help the lees by means of a succession of circular currents that are generated inside them. It also offers the opportunity to mature the wine for a longer period of time without oxidation.
After the fermentation process, the wine is correctly aged on its lees for 11 months.
José Pariente Cuvee Especial is a white wine from the Rueda Designation of Origin (D.O.) produced by the José Pariente winery. This winery is located in La Seca (Valladolid).
Tasting Note
Straw yellow colour with greenish edges, bright. It has a nose of very elegant subtlety, in which the minerality is enhanced. On the palate it is a wine with enormous complexity, with an impressive smoothness, a silkiness that provides elegance, in which this mineral touch reappears.
