Elaboration and Aging
The grapes come from vineyards of more than 60 years located on the road to the port, term of La Seca, (settled on platforms of quartzite boulders) and in Hornillos de Eresma (sandy soils). Formed in traditional glass, the vines have an approximate yield of 3,000 kilos per hectare. We develop an ecological agriculture based on tillage, soil maintenance through vegetable covers and sulfur. The harvest is manual and is carried out using boxes of 18 kilos, which allows a first selection of the grapes in the field and later in the winery with a selection table. Alcoholic fermentation takes place in French oak barrels of 500 and 228 liters and partial malolactic fermentation. Subsequently, an aging of 11 months is carried out, with the wine in permanent contact with its lees thanks to the batoneo.

Bodegas José Pariente is Family, land, excellence and passion for wine. The history of this winery goes back to Don José Pariente, whose passion for more than forty years was to cultivate the Verdejo variety to make artisanal wines. He practiced meticulous viticulture and believed in his land, in the quality and pleasure of making wine. His desire, to produce great white wines, is the goal of the current winery, which his daughter Victoria Pariente created in 1998.
The first documents mentioning wine production in the area date back to the eleventh century. The impulse of the monastic orders and the proximity to important cities of medieval Castile favored the cultivation of the vine. This development culminated in 1600, in the middle of the Spanish Golden Age, when the golden wines of the Rueda Denomination of Originreached great prestige.
