ELABORATION
The harvest is done by hand and in 200kg boxes. The grapes are vatted by gravity in the tanks, where they ferment at a controlled temperature (ranging between 18 and 24ºC), undergoing continuous and short pump-overs. Post-fermentative maceration lasts more than 15 days and immediate aging is done in French and American oak barrels for 16 months, remaining in the bottle for at least another 24 months.
