Elaboration:
This wine is only made in those years in which the weather allows optimal conditions of overrun. The harvest is done manually and with a certain percentage of noble rot. We fermented the must in new American oak barrels, cutting said fermentative process by physical procedures (racking, cold and filtration). The wine goes back to barrels for 8 months where it acquires its complexity, deciding by tasting the moment of its bottling.
