Elaboration and Aging
Made with the varieties 90% Tempranillo, 5% Mazuelo, 3% Garnacha, 2% Graciano Coming from vineyards belonging to the Finca Ygay. The vineyards of Ygay occupy an area of 300 hectares surrounding the winery, in the Rioja Alta, with a difference in altitude from 320 meters to 485 meters. The clusters are de-stemmed and squeezed gently. The grapes ferment separately in stainless steel tanks, with temperature control. The incubation has a duration of 9 days during which continuous work of reassembly and bazuqueos, to favor the contact of the must with the skins and cause a slow and natural extraction of aromas and Polyphenols. After the fermentation the solid parts of the grape are pressed in vertical presses, by means of a soft and slow process that favors the extraction of the color and mature tannins that reside in the skins.
Fostering Process: 24 months in American oak barrels of 225 liters capacity.
