Tasting notes:
- Color intense cherry with the edging still violaceous.
- Nose it is complex and intense. In this wine is very present the red fruit and licorice characteristic of Tempranillo with nuances of cocoa, pastry, smoked combined with aromas of red fruit in liquor with floral touches, mainly violet.
- Mouth wide and silky, with good balance. It has a long and persistent finish where the notes of licorice and black pepper remain.
Elaboration and aging: Made with grapes
100% Tempranillo, from a selection of grapes located in
San Vicente and
Haro (Rioja Alta). The alcoholic fermentation takes place in stainless steel tanks at a temperature lower than 25º C, to maintain all its aromatic potential and achieve optimum color extraction. The malolactic fermentation is carried out on lias in steel deposits, with periodic overruns and micro-oxygenation to stabilize the color and achieve a greater softness in the mouth.
Aged for 12 months in new American oak barrels from the Appalachians (65%) and French oak from the forests of Chateauroux and Loches (35%). Selected wood of extra fine grain and dried naturally for 36 months to obtain a fine and elegant wood, which is ideally integrated with the wine.
