Elaboration and Aging:
Sierra Cantabria Seleccion is a monovarietal of Tempranillo . The grapes come from their own vineyards planted at 560 meters altitude in San Vicente de la Sonsierra and Laguardia. The preparation of Sierra Cantabria Seleccion begins with a manual harvest and a double selection, one in the vineyard and another in the winery. Once in the cellar the must ferments for 2 days with selected yeasts at 27ºC. Subsequently a maceration is carried out that lasts 17 days. To finish the fermentation process Sierra Cantabria Seleccion ages during 6 months in deposit and during 6 months more in American and French oak barrels .
