Pago de la Oliva Rosé Deja Vu is a rosé wine full of nuances and expressiveness. As its name indicates, this rosé wine makes you relive the sensations of rosé wines as they were made in the past, with intense colour and mouthfeel. This is an organic wine made from 100% Tempranillo grapes, from 30 year old vineyards with pebbly soil, very little fertile and low production.




TASTING NOTES:

Sight: Clean and beautiful strawberry pink colour.

Nose: Intense aromas dominated by red fruit tones (strawberry and raspberry), with some vegetal nuances (mint and fennel).

Palate: In the mouth it is fresh, tasty, full-bodied and with good length, ending in an explosion of aromas.


DENOMINATION OF ORIGIN: Vino de la Tierra de Castilla y León.


WINEMAKING
: Made with 100% Tempranillo grape variety.


AGEING: The must ferments in stainless steel tanks at a controlled temperature, remaining on its lees for 2 months.


CURIOSITIES: Organic grapes and certified winemaking. After several years of conventional cultivation, they realised that chemical treatments only led the vineyard to a situation of weakness and addiction, which solved some problems but generated others. They decided to stop using non-natural products and started with a type of agriculture that was more respectful of the plant and the environment. In this way they observed how the plant was evolving positively, and continued working on creating a stable ecosystem that would allow this type of cultivation.

When they started to make wine, they decided that the wine production should also be organic, so that they have organic certification for both the grapes and the wine production. A way of understanding the countryside, of achieving maximum quality and of producing a final product free of pesticides and harmful chemicals.
